Ingredients

  • 175 Grams Cracker
  • 75 Grams Melted Butter
  • 11 Grams Gelatine Powder
  • 33 Grams Water
  • 180 Grams Cream Cheese
  • 70 Grams Sugar
  • 3 Pieces Lime
  • 1 Tablespoon Lime Zest
  • 200 Grams Nestlé® Lime and Vanilla Ice Cream
  • 12 Slices Lime

Step 01.

10 min

For biscuit base, place cracker into food processor and process into crumbs. Pour in butter and mix it well.

Step 02.

5 min

Place cupcake cases into a muffin or cupcake baking tin. Into each case, place 25g of crumbs and flatten it. Set aside.

Step 03.

To start on the cheesecake, bloom gelatine with water and set aside.

Step 04.

In a bowl, whip the cream until soft peaks are formed. Set aside.

In another bowl, whisk cream cheese until soft and add in sugar. Mix until smooth.

Then, add in lime juice, lime zest and Nestlé® Lime and Vanilla Ice Cream. Mix well.

Fold in whipped cream and mix well. Mix gelatine with water until dissolved.

Double boil or microwave it until the mixture looks clear. Cool slightly before folding into cream cheese mixture and mix well.

Pour batter into cupcake cases until full and chill in fridge for at least 3 hours.

To serve, top each cheesecake with half scoop of Nestlé® Lime and Vanilla Ice Cream and garnish with lime slice. Serve immediately.
